Bavette is the french word for flank or flap steak. A highly flavorful, loosely textured flat cut of meat taken from the abdominal muscles of the steer.

Use Sunflower Farm Seasoning (avail for purchase on this site) with some olive oil. Coat steak with spice, set in fridge for 3 hours or all day, pat dry, then cook on grill or cast iron skillet to medium rare. Bon Appetit.

I can't even describe how tasty this meat is. Most cuts only need salt and pepper and the right cooking method. Ask for cooking recmommendations on the co-op FB page and Bob, Maria or Mike from Sunflower Farms will steer you in the right direction!
